MAIN SCIENTIFIC DIRECTIONS OF THE SECTION
A typical technological process of the food industry is formalized as a complex physico-chemical system (PCS), which is understood as a multi-phase, multi-component, generally inhomogeneous continuous medium distributed in space (within the working volume of the technological apparatus) and variable in time, at each continuity point (homogeneity) of which and at the phase boundary there is a transfer of mass, energy, momentum, angular momentum, electric and magnetic charges in the presence of sources and sinks of these substances. The FCS element is a separate phenomenon - chemical, thermal, diffusion, mechanical, electrical, magnetic, etc. Relationships between elements are natural causal relationships between phenomena, and a combination of elements and relationships forms the structure of the system. The structure of FCS is divided into levels of the hierarchy of phenomena along the vertical: 1) phenomena at the atomic-molecular level, occurring inside each of the phases and at the interface; 2) phenomena at the level of molecular globules or aggregates of molecules within each of the phases; 3) phenomena at the level of a single inclusion of a dispersed phase (drop, bubble, solid particle) in a layer of a carrier (continuous) medium; 4) phenomena in an ensemble of particles of a dispersed medium that occur under conditions of constraint; 5) phenomena of the fourth level occurring in the contact element of the technological apparatus; 6) phenomena in the contact stage of the apparatus, consisting of a set of contact devices; 7) a set of phenomena at the level of the technological apparatus as a whole; 8) the level of the complex of technological apparatuses (workshop, production). At each level of the hierarchy of phenomena, properties of a deterministic and stochastic nature are manifested.
The mathematical formalization of FHS is based on three types of operators: technological, functional, modular. The technological operator formalizes the mapping of the space of input variables into the space of output variables corresponding to the actual physical and chemical processing of raw materials in the technological apparatus. A functional operator is a mathematical idealization of the specified mapping in the form of a mathematical model (usually a closed system of differential, integral, integro-differential equations and empirical relations, supplemented with the necessary initial and boundary conditions). The modular operator represents the mapping mentioned above in the form of mathematical dependencies, which are the solution of the equations of the functional operator, and the solution can be analytical or numerical.
Systems approach to the study of technological processes and production of the food industry consists in the scientifically based construction of functional and modular operators of specific FCS of food production and, on this basis, solving the problems of optimal design, management, optimization and intensification of these productions.
